Macaroni and cheese. It’s an American classic. It’s simple, effortless, and comforting…no matter what your age. For the past few years in the food scene, mac and cheese has been going through a re-imagining, of sorts. A lot of restaurants these days offer their own twist on the traditional classic. However, there’s one restaurant in Idaho (food truck, actually) that has taken their mac and cheese game to a whole other level. Whether you’re in the mood for the classic version, or something a little crazier, this is the place to go.

A relatively new addition to Boise’s food truck scene, Mad Mac has been taking the Treasure Valley by storm with their wild mac and cheese combinations. This isn’t your grandma’s mac and cheese. This is something entirely different.

The food truck’s slogan is “Macaroni to die for”. Enticing, right? Mad Mac is the perfect place to get your comfort food fix….and a little extra.

They offer up an original version of mac and cheese for those feeling not-so-adventurous. But it’s Mad Mac’s crazy mac and cheese concoctions that have made them well-known.

Then there’s the “Skully’s Sweet Pork” which is macaroni topped with shredded and BBQ sauce covered pork with diced red onions.

Some combinations get even crazier, such as the “Bacon Cheeseburger Mac”. It’s exactly what it sounds like, combining two American favorites into one seriously delicious dish.

Another popular favorite is “Buffalo Chicken Mac”. Woah.

You can spot the food truck at a few key locations throughout the Treasure Valley, with their go-to spot right by the Idaho State Capitol Building in Downtown Boise. You can also find them at a variety of businesses throughout the week and at the occasional festival on the weekend.

Their macaroni isn’t the only thing to die for. Their desserts are also wildly popular for those who have a sweet tooth. They currently offer both Coconut Lime Cake and Chocolate Overload Cake.

This truck sure packs a lot of flavors into their relatively small location. It may be street food, but it’s elevated street food. Rain or shine, you can rely on Mad Mac to satisfy that cheesy craving!
